Update all example resources

Turns out some old resources used in the examples are broken to a certain extent. For instance for NPDF31_nnlo_as_0118_DISonly I need to re-run vp-setupfit for it to work correctly with use_cuts: fromfit and so the dataspec.yaml example runcard doesn't work with #1430 even though it should. After I re-run vp-setupfit --legacy on the resources it does.

Let's make a note (@scarrazza, @Zaharid) to discuss the 4.0 example resources this Wednesday. It should be something quick. After we discuss I'll take care of updating all examples and tests. And I'll do #1152 (closed) too.
