Updating K-folding and n3fit documentation

This PR updates the documentation on the K-folding and n3fit.

It is [WIP] as for now I'll use it to collect the results of the different benchmarks and grid scans that I'm still running.

My idea is that together with the documentation about this particular choice of parameter, figure of merit, etc to have some information on why is it a good or bad choice.
