Update datasets_properties_tables

I wanted to be able to use the action to summarise the dataset specification in a validphys report (seperate from a fit)

I thought now was a good time to rename the fit action and make it use fit context rather than opening file

the action is gross at the moment. I kind of wanted to simultaneously make the extraction of info from each DatasetInputSpec automatic but then keep the output the same as before the PR

Perhaps I should just extract the fields we want with list comp
